How to make street style chole kulche at home?
Ingredients:
1. 2 cups chickpeas, soaked overnight
2. 1 onion, chopped
3. 1 tomato, chopped
4. 2 green chilies, chopped
5. 1 tsp ginger-garlic paste
6. 1 tsp cumin powder
7. 1/2 tsp turmeric powder
8. 1/2 tsp red chili powder
9. 2 tbsp coriander leaves, chopped
10. Salt to taste
11. Oil for cooking
For the chole:
12. 1 onion, finely chopped
13. 2 tomatoes, finely chopped
14. 3 green chilies, finely chopped
15. 1 tsp ginger-garlic paste
16. 1 tsp cumin powder
17. 1/2 tsp turmeric powder
18. 1/2 tsp red chili powder
19. Salt to taste
20. Oil for cooking
For the kulche:
21 All-purpose flour / maida – 2 cups (250 grams)
22 Baking soda – ½ teaspoon
23 Salt – ½ teaspoon
24 Sugar – 3 tablespoons
25 Milk – as required
26 Ghee or butter – 4 tablespoons
Method:
There are many ways to make chole kulche, but this street style recipe is my favorite. Start by heating a large pan on the stove over medium heat. Then add in the chickpeas, onion, and tomato sauce. Stir well and cook for about 10 minutes, until the chickpeas are soft and the sauce is thick.
Next, add in the spices: garam masala, cumin powder, chili powder, and salt. Stir well and cook for another minute. Then add in the cooked rice and mix everything together. Cook for another 5 minutes, or until the rice is heated through.
Finally, assemble the kulchas: take a ball of dough and flatten it into a disc. Place a heaping spoonful of chole in the center of the disc, then fold up the edges to enclose the filling. Pinch the seams together to seal, then gently flatten the kulcha with your palm.
Place the kulchas on a hot griddle or tava (skillet) and cook for 2-3 minutes per side, until golden brown and crispy. Serve hot with more chopped onions and a dollop of yogurt or raita on top. Enjoy!
